Yes, May is a great time. The Caribbean is just coming out of their dry season and there will be stray showers. The temps will be great compared to August. Go and have a good time.
In Florida Key West will probable be about the the best. One thing to think about is the cost to travel in Florida keeps going higher and higher. If it is the beach your interested in you might take a look at fiji before you book chances are you will find something better for cheaper.

Go to Fort Lauderdale main beach. Winsurfers, hobby cats and stuff rented about 3 blocks south of Las Olas Blvd.
Sail boats, banana boats and jet skis rented at Harbor Beach Hotel, about 1/4 of a mile south. Take first left going south after Bahia Mar Marina.
Jet skis for rent 4 blocks north of Las Olas Blvd.
See the keyosk located across the road and two blocks south of Las Olas for information on rentals and boat tours.
bring an umbrella or rain coat. I always forget these two but they're really important! Also if you're going to be carry a purse/backpack, get an over the shoulder one so you can keep your things close to your body and in sight. Pick pocketing is really common in europe. A money belt would be another idea, but i never used mine. And good walking shoes! Youll want to explore. In the summer its not too cold but nights can be chilly so bring a sweater or two. and remember anything else ud usually take on a trip… toiletries, clothes, maybe a travel alarm clock, swimsuit, medicines (you might want like dramamine to help you sleep on the plane ride and probably something like ibprofen. something like pepto bismol is good too, the first two weeks i was in spain i got a little sick) Also if you're going to bring a digital camera or hair dryer or laptop you'll need a converter and adapter. Another good thing to have when traveling europe is a suitcase lock. You can get TSA approved locks so that they dont have to break your lock during inspection.
Bring a swim suit in your carry on so when you get on the ship early you can use the pool.
Go the Paridise island via taxi and enjoy a hassle free beach… nobody trying to sell you things. if there are some people there look at them in the eye and say no thank you and they wil leave you alone. If you show weakness they will swarm….
On Coco cay make sure you are on the first transport, so you can get your choice of chairs. If you want quasi alone time walk about 1/4 mile straight through the main area and follow the shore line to the end of the beach.. there are no ammenities there but you will be somewhat alone. There are always the old people that walk that will occasionaly pass by. Put you beach chair almost in the water that way they pass behind you and not in front of you which I find annoying. However if you want to be close to the action I suggest the secong lagoon to the left.. it is close to the food and the bars.

Kings Island is okay, nothing great, but not bad. It gets really crowded. But to give you some ideas, Williamsburg Virginia is the place I suggest. It has everything in an 45min drive. Historic downtown (already there) Yorktown (4 min) Jamestown (3min) Virginia Beach (45 min) Richmond VA (45 min). Its the type of town you can walk alone in at night and not feel a bit scared. Other places, maybe Kitty Hawk NC? Tallahassee FL?
