See this list and take down phone numbers of all the five star places. You're going to come across several places, click on their link and/or call the hotel and NEGOTIATE A PRICE, just keep asking for a lower price, Can you go lower? Can you go lower, and keep asking and keep asking, YOU WILL BE PLEASANTLY SURPRISED. If you're willing to spend 1100 pp, you are aiming at having a super huge blast. I have seen deals of all inclusive per ROOM not per person of about 150 dlls/day at a five star resort with private beach etc. That would mean about two weeks, w/o including airfare for you and your man. I recommend you do this with more than one place, and you will come across some that don't budge, but you'll also come across some that slide and slide and slide, and are just starving for more people. The good thing about this area is that there are a ton of great hotels, so if one or two are doing ok, that doesn't mean that ALL are doing ok. Diligence here will lead to a longer, awesome vacation. Remember, also, the peso has suffered vs the dollar recently, so other expense, tips and such will probably go further, and it's just another reason why you should keep asking them to lower their prices.

May is a great time to travel to Mexico or the Caribbean. Dominican Republic also has some great all-inclusives. The Punta Cana or La Romana area have beautiful beaches. You could easily do 10 days in the Dominican Republic. Air fare really eats up alot of your budget. You don't say where you will be flying from.

I would ask on the invitations for everyone to write down their favorite Mexican Food Recipe and bring to the shower. Put the recipes in a sombrero for a party game. Draw out 2 or 3 for gadget giveaways, like taco holders, salsa dish, ect. (These are little things you can get at the dollar store!) Then the bride will have alot of great recipes from friends and family to start her new cooking venture!
As far a your menu, you can do tacos and place the condiments out so everyone (depending on their diet!) can fix their own. I am also including a recipe for King Ranch Chicken that can be made ahead and frozen…just heat and serve for a hot dish!
Drinks can be fresh fruit Liquado's which is just putting whatever fresh fruit into a blender with ice and mixing it ! (Kinda like a Slurpee or Icee) You can also make up a huge batch of Virgin Margarta's in a punch bowl with floating limes and green candles.

King Ranch Chicken
3 – 4 lb. chicken (or 4? – 5? boneless, skinless chicken breasts)
onion
1 or 2 ribs of celery
salt
pepper
1 – 2 tsp. chicken soup base mix (since i use skinless chickens)
12 corn tortillas (i use white corn. and i usually break some so get extras)*
1 (10.5 oz.) can cream of chicken soup
1 (10.5 oz.) can cream of mushroom soup**
8 oz. grated extra-sharp cheddar cheese
1 medium onion
chili powder
garlic-salt
1 can Rotel diced chiles and tomatoes
Put quartered onion, celery, and chicken in a big pot. Add salt and pepper to taste (i think i put 1 Tbsp. salt and 1/2 tsp. pepper). If you are using skinless chickens, you might want to add a couple of teaspoons of chicken soup base mix (read the container to see what seems reasonable). Add water until it covers all. Bring to a boil and then reduce heat and simmer until chicken is done and tender.
Meanwhile, grate cheese and dice onion (keeping separate). Stir the two soups together. When chicken is done, shred with forks and reserve stock. Put tortillas in stock to soften (maybe 6 at a time). Carefully (with tongs) put one layer of sopping wet tortillas in 9×12, 9×13, or 8×12 dish (6 tortillas, slightly overlapped — make sure they are sopping wet). Then put a layer of shredded chicken and a layer of diced onion. Sprinkle with chili powder and garlic-salt to taste. Then put half the soup mixture on and then a layer of cheese. Repeat: soften tortillas, and layer them (sopping wet) in dish. Then layer chicken, onion, chili powder and garlic-salt, soup, cheese. Pour Rotel chiles & tomatoes on top of the whole thing. The juice should come about halfway up the sides of the casserole. If it doesn't, add some stock until it does. Refrigerate for one day so flavors can blend (or freeze for up to 3 days).
Get it out of refrigerator about 15 – 20 minutes before you cook it. Put it in oven (uncovered) and cook on 375 degrees for 35 minutes — no need to preheat.
Let sit for 10 – 15 minutes before serving so it doesn't slide all over the place. It's also good reheated.
sounds to me like u have a big decision on your hands so i would go to mexico since it's all inclusive & u can do all of those things u want to do there that u would have done in maui. u can go to maui on your second honeymoon. then u will have something to look forward to doing so u can start saving now for that 2nd honeymoon. good luck!

What do you two like to do? What kind of honeymoon do you want? An active, play and party honeymoon or a low-key, relax from the stress of the wedding honeymoon?
My husband and I love hiking and being outdoors and just wanted to relax so we went to Yosemite National Park in California and rented a cabin. We slept in, cooked our own meals, went hiking and just lazed around.
If you're into cities and sightseeing, Chicago and San Francisco are two of my favorites. If you want nature, check out National Parks. October is getting cold in some of the nothern ones but the Gatlinburg, Tennesee area would still have nice weather and possibly still have gorgeous fall colors.
Decide what kinds of things you want to do and then find the location that matches them.
When two people get married and come to live together, there is an adjustment period. You have to learn to do things together and quit expecting the other person to read your mind. You have to learn to quit trying to change each other and just love each other for what you are. That takes time.
I'm just going to throw my 2 cents in here. I've been all over the world and if I've learned one thing its ISLANDS ARE BORING! Stick with Mexico.
